ARM & HAMMER™ Ammonium Bicarbonate Treated Food Grade
Ammonium Bicarbonate Food Grade (Treated) is a pure form of ammonium bicarbonate, with the addition of no more than 0.55% Magnesium Carbonate flow aid, in compliance with the standards set by the Food Chemicals Codex monograph. The inclusion of a flow aid significantly improves the handling properties of the product, addressing the tendency of the untreated version to cake.
Ammonium Bicarbonate is an extremely efficient leavening agent. When used without an acid, it undergoes a complete conversion process in the oven, resulting in the generation of ammonia gas, carbon dioxide gas, and steam. Notably, it leaves no residual salt behind and does not contain sodium.
Ammonium Bicarbonate finds common use in the production of crackers and cookies, with a final residual moisture content of no more than 3-5%. Its effectiveness in this application is well-established.
