Ammonium Bicarbonate Food Grade (untreated) is pure ammonium bicarbonate, meeting the requirements of the Food Chemicals Codex monograph. Ammonium Bicarbonate is highly effective as a leavening agent. Used without an acid, it converts completely to ammonia gas, carbon dioxide gas and steam in the heat of the oven and leaves no residual salt behind. Ammonium Bicarbonate does not contain sodium. Typical uses for Ammonium Bicarbonate are in crackers and cookies with final residual moisture of not more that 3-5%.
