Flow-KŪ Potassium Bicarbonate is a food grade product that includes a flow aid that assures excellent storage and handling properties.Sodium Reduction Flow-KŪ can be used as a replacement for sodium bicarbonate in the leavening systems of cakes, muffins and cookies to reduce the sodium level with essentially no difference in overall quality and flavor of the baked product. Low or No Sodium baking powders can also be formulated with Flow-KŪ Potassium Bicarbonate. Aesthetic Enhancement When desired, Flow-KŪ can be used to enhance browning and the toasted and grainy flavor notes of certain recipes. Enhanced sweetening has also been observed. Potassium Nutrition Interestingly, Potassium is the only mineral in addition to Calcium associated with positive health claims. In a properly formulated product, potassium bicarbonate can be a source of sufficient potassium to take advantage of these claims. Flow-KŪ can of course be used in effervescent drink mixes and its high solubility limit in water can be advantageous in this application. When substituting potassium bicarbonate for sodium bicarbonate in a formula, 19% more potassium bicarbonate is required to yield the equivalent amount of carbon dioxide release. |
